Apricot chews

To curb afternoon sweet cravings, try these.  Hempseeds are rich in Omega 3 fatty acids.  Sweet nutty and chewy.  You can store these in the fridge for up to 2 weeks.

1 cup dried apricots, roughly chopped

10 dates, roughly chopped

1/3 cup shelled hempseeds

1 Tbsp Almond butter

1/2 tsp vanilla extract

1 Tbsp organic apple juice

2 Tbsp coconut flakes

1. Pulse all ingredients together, except coconut, in a food processor until mixture forms a chunky paste.

2.  Form into balls and roll to coat in coconut.

3.  Place on a tray lined with parchment paper in the fridge.  Chill until firm about 1-2 hours and enjoy!  You can freeze them too 🙂
