Morrocan Carrot Spead

This is a recipe that you MUST try.  I first had some of the most delicious spread at Inspire Health and now I can’t get enough of it!!!

Ingredients:

1 lb  (approx. 7-8) carrots

3 Tbsp olive oil

3 Tbsp apple cider vinegar

1 small garlic clove

2 Tsp cumin

1/2 tsp sweet Hungarian paprika

1/2 tsp sea salt

1/2 tsp fresh grated ginger

Parsley to garnish

Steam carrots for about 14-16 minutes or until soft.  Let cool.  Blend all ingredients together, taste, adjust and serve.  Garnish with parsley.
