Green Lentil Salad

It is best to buy lentils dried.  They can be soak for just a few hours.  They absorb water quick, and thus reduce cooking time!


1-2 cups lentils

1 bunch of Parsley

1-2 lemons

Sea salt and pepper

How to prepare:

To soak:  Place 1-2 cups of lentils in a bowl (ceramic preferably, because acid reacts with plastic and metal), cover with slightly cooler than boiling water, add a splash of apple cider vinegar or lemon and let sit.

Simmer lentils for 10-15 minutes in stock or water, again just enough to cover them, no lid.  Check texture.  Than let cool.

Chop up parsley, add to lentils and dress with fresh squeezed lemon, sea salt and pepper to taste.

Option: you can add some cumin/cayenne for heat.
