Super Cabbage Salad

3 tablespoons olive oil or 2tbsp olive and 1tbsp flax oil
1 tablespoons apple cider vinegar/lemon/lime
You can add a little natural sweetener if too sour
1 shallot, minced

1/2 head red cabbage, grated or thinly sliced
1 apple, diced small (optional)
2 celery stalks, diced small
1-2 Carrots grated
1/2 cup chopped walnuts/pumpkin seeds

Try adding some roasted veggies too, this will add some dimension to the salad.  Chop up beets, fennel, Brussels sprouts, parsnips, etc.  Toss with some olive oil salt and pepper, spread on a baking sheet (lined with parchment paper), and bake @ 375-400C until slightly tender.

Toss all the ingredients together in a bowl and serve.  This salad is always better the second day when the flavors have had time to marinate.
